Beef and Veggie Shepard's Pie (for 1 or 2)

Introduction

This is another meal that I make when my husband is out of town. I was craving Shepard's Pie one night and I wanted something filling but not SUPER high in calories. I grabbed some ground beef and pulled out some veggies I had in the fridge. Of course, you could use any veggies you had on hand, but this is what I had. I grabbed some ground beef and pulled out some veggies I had in the fridge. Of course, you could use any veggies you had on hand, but this is what I had.

Ingredients

    6 oz ground beef
    1 small yellow crook neck squash, chopped
    1/2 onion, chopped
    1 carrot, chopped
    1 celery stalk, chopped
    1/2 green bell pepper, chopped
    1/4-1/3 cup beef broth
    1 cup instant or leftover mashed potatoes
    cornstarch
    salt and pepper to taste
    Pam
    Paprika

Directions

Add ground beef, chopped vegetables, salt and pepper in a frying pan, and fry until veggies are tender. (Add water if pan gets too dry) Add beef broth. Mix about 1 tbsp of cornstarch with 1/8 - 1/4 cup COLD water. Add to veggie mix.

Place mix in a small casserole dish, or other oven safe dish.

Spread prepared mashed potatoes on top. Lightly spray with Pam, to help potatoes brown. Sprinkle with paprika.

Bake at 350 degrees until potatoes are browned, or until hot and bubbly.

Makes two 1 1/2 - 2 cup servings (depending on how many veggies you use.
