Blueberry Oatmeal Muffins

Introduction

Number of Servings: 12

Ingredients

    1 cup whole wheat flour
    1 tsp baking powder
    1tsp baking soda
    1 tsp cinnamon
    1 cup oats
    1 egg
    1/4 cup unsweetened applesauce
    1/3 cup brown sugar
    1tsp vanilla
    1 cup frozen blueberries

Directions

Makes 12 muffins. Grease muffin pan and preheat oven to 400 (I bake on 375 b/c my oven is old and needs repair but the management company won't fix!)

1. In a small bowl, combine flour, baking powder, baking soda, and cinnamon

2. In a larger bowl, combine egg, applesauce, vanilla, brown sugar, and .5 cup blueberries. Stir well.

3. Add flour mixture to liquids and stir enough to moisten. (I add small increments at a time so I don't over mix). Add remaining blueberries. Add oats.

4. Pour into muffin pan. Bake for 20 to 25 minutes or less depending on your oven. (I usually bake 15 to 20)
