Introduction

Number of Servings: 4

Ingredients

    1/2 package turkey kielbasa (about 7 oz)
    1 can (14 oz) no salt-added diced tomatoes
    1 can (14 oz) black beans
    1 cup chicken broth
    1 medium onion, diced
    1 large red bell pepper, diced
    1 clove garlic, finely chopped
    2 tsp carribbean jerk seasoning
    1 tsp garlic powder
    1 tsp salt to taste
    1 tsp onion powder
    2 cups prepared brown rice

Directions

Combine diced peppers, diced turkey kielbasa, diced onions, and chopped garlic in a pot. Cook over medium-high until vegetables are tender (about 5 minutes). Add remaining ingredients (except rice), bring to a boil, and simmer for 20 minutes, or until liquid has reduced to your desired amount.

Serve over brown rice. Makes 4 servings.
