Lemon Chicken Stir Fry

Number of Servings: 6

Ingredients

    20 ounces of chicken thighs, chopped
    Entire package of SUN BIRD Lemon Chicken Stir Fry Mix Seasoning
    2 TBS Olive Oil
    2 eggs
    2 TBS chopped garlic
    1 onion, chopped
    8 ounce can of water chestnuts, drained
    Entire bag of 10 ounce Hy-Top Broccoli Stir Fry veggies (Or 5 cups of any frozen stir fry veggie mix that is 35 calories per cup.)

Directions

Heat oil, onions and garlic in a wok until onions are clear and carmelized. Add chicken. When chicken is no longer pink, add in 1/3 cups of water, the seasoning packet, and the chestnuts. Coat the veggies & chicken with the sauce packet mixture.
Bring to a boil.
When the liquid is boiling, take 2 raw, scrambled eggs, and drop them in strings into the soupy water.
Serve when veggies are no longer frozen and cooked to desired doneness.
Makes 6 servings.
