Introduction

These mini pecan pie bites are crunchy and delicious! They are a great alternative to traditional sweet pecan pie and the individual phyllo shells help with portion control! These mini pecan pie bites are crunchy and delicious! They are a great alternative to traditional sweet pecan pie and the individual phyllo shells help with portion control!
Number of Servings: 22

Ingredients

    3 packages of Athens mini phyllo/fillo shells (1 package=15 shells)
    2 cups pecans
    1/2 c. dark corn syrup
    1/2 c. granulated sugar
    2 eggs. beaten
    1 T. butter, melted
    1/2 t. vanilla
    dash (less than 1/8 t.) salt.

Directions

Preheat oven at 350 degrees. Chop pecans into smaller pieces and bake in a single layer on a large baking sheet for 8-10 minutes until toasted and fragrant.

In separate bowl, first combine sugar and corn syrup. Once well mixed, add beaten eggs, butter, vanilla, and salt. Mix in toasted pecans.

Line parchment paper on a baking sheet. Spoon pecan pie filling into phyllo cups, being careful to not fill full to rim (as they will bubble over if you do).

Bake 20-22 minutes, then remove from oven and allow to cool completely on wire racks.

1 serving = 2 prepared, filled phyllo shells
