Introduction

This is a carrot cake recipe made as muffins instead. This is a carrot cake recipe made as muffins instead.
Number of Servings: 18

Ingredients

    1.5 cups wheat flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1/2 tsp cinnamona
    1/2 tsp ginger
    1/2 tsp nutmeg
    3 eggs
    1/2 cup canola oil
    1 tsp vanilla
    1/2 cup sugar
    1/2 cup brown sugar
    1.5 cups chopped carrots
    1 cup walnuts
    3/4 cup crushed pineapple
    1 cup coconut
    1 cup raisins


Directions

Preheat oven to 425 degrees.

Mix ingredients until moistened.

TURN OVEN DOWN to 375 degrees.
THEN bake 15 -18 minutes in muffin cups.
Very moist!!
