Mom's Spinach Balls

Introduction

When I was a kid, this was the only way my mom got me to eat spinach. Now, it's the only way I get my husband to eat it. When I was a kid, this was the only way my mom got me to eat spinach. Now, it's the only way I get my husband to eat it.
Number of Servings: 18

Ingredients

    1 (10-oz) box of frozen spinach
    1/2 c. parmesan cheese
    1 c. plain bread crumbs
    4 Tablespoons butter
    1 large egg

Directions

1. Microwave spinach, according to directions on box.
2. Melt butter, and mix all ingredients together with spinach.
3. Form mixture into balls, a little smaller than ping-pong balls, and place on greased baking sheet.
4. Bake at 400 degrees Fahrenheit for 10 minutes.

Makes about 18 servings.

*Note: you can also put a slice of water chestnut into each ball for a little crunch.
