This is delicious. The walnuts really boost this recipe to the next level with their crunch. You can serve it as a side dish, or as the entire dinner. Love it! This is delicious. Number of Servings: 2

Ingredients

    2 cups butternut squash (cut into 1/2 inch cubes)
    a few sage leaves
    0.5 tablespoon coconut oil
    salt and pepper to taste
    0.5 tablespoon coconut oil
    0.5 onion (sliced)
    1 clove garlic (chopped)
    1 cup chickpeas
    2 tbsp toasted walnuts

Directions

1. Toss the butternut squash with the coconut oil, sage, and season with salt and pepper.
2. Roast the squash in a preheated 350F oven until tender, about 30-40 minutes and set aside.
3. Meanwhile, heat the rest of the oil in a pan.
4. Add the onion and cook on low until caramelized, about 40-60 minutes.
5. Add the garlic and saute for a few minutes and set aside.
6. Add everything to the pan and toss.
