Southwestern Potato Slow-Cooker Stew

Ingredients

    Low Sodium Vegetable Broth, 3 cups
    Yellow Sweet Corn, Frozen, 1 cup
    Green Peppers, chopped, 0.5 cup
    Cilantro, chopped, 1 tbsp
    Potato, cubed, 3 medium
    Red pepper, crushed, 1 tsp
    Corn Starch, 2 tbsp
    Red onions, chopped, 0.25 cup

Directions

Place all ingredients in crock pot and cook on high for 3-4 hours, or low for 7-8 hours.

Makes five 1-cup servings.
