Semi-homemade Ground Turkey & Veggie Lasagna

Ingredients

    Ground turkey, 93% lean, 1 lb.
    Yellow Bell Pepper, 1/2 pepper, chopped
    Carrots, raw, 1 cup, chopped
    Celery, raw, 1.5 cup, diced
    Onions, raw, .25 cup, chopped
    Garlic, 3 cloves
    Garlic, 1 clove
    Mushrooms, fresh, 1 cup, pieces or slices
    Broccoli, fresh, 1 cup, chopped
    Kale, 1 cup chopped
    Asparagus, fresh, 1 cup
    Ricotta Cheese, part skim milk, 8 oz
    Mozzarella Cheese, part skim milk, 8 oz
    egg, 1 large
    *Ragu Spaghetti Sauce (tomato sauce), 3 cup
    *Pasta, Lasagna Noodles, about 15
    Oregano, ground, 1 tbsp
    Pepper, black, 1 tbsp
    Olive Oil, 1 tbsp

Directions

Set a pot of water to boil for the noodles. preheat oven to 375 degrees, with ovenrack in the middle. Cook and drain noodles while turkey & vegetables are cooking. In a saute pan, brown turkey. Drain off all but 1 tbsp of grease & set browned turkey aside. In same pan, add the chopped veggies and 1/2 to 1 tbsp olive oil, heat on medium heat and cook for 3-5 minutes. Mix together ricotta cheese, half the mozzarella, one egg and oregano or other seasoning. Add tomato sauce and heat through. In a 13x9 inch pan, spoon 1/2 cup of sauce into the bottom, layer 4-5 noodles on the sauce. Spoon just over half the remaining sauce evenly over the noodles. Layer 4-5 more noodles, then spoon all the cheese mixture evenly over noodles. Layer 4-5 more noodles, then remaining sauce. Cover with foil, bake for 30 minutes. Move oven rack up one. Remove foil, add remaining mozzarella cheese & bake uncovered for 10 minutes. Makes 12 servings.
