Ingredients

4 cups water
1 cup dried split peas
1 cup diced onion
1 clove garlic, minced
1 cup chopped celery
1 cup chopped carrots
1 tsp salt
2 tbsp pepper
Directions
1. Combine dried split peas and water in pot and bring to a boil. Boil for two minutes. Cover and remove from heat, let sit 1 hour.
2. Add onion, garlic, salt, and pepper. Heat to boiling, boil about 2 minutes. Cover and simmer until peas are soft (about 1 hour).
3. Add carrots and celery. Cover and simmer until vegetables are soft (about 45-50 minutes).
