Ingredients

1/2 lb. (8-10) uncooked whole wheat lasagna noodles
1 cup low-fat cottage cheese
1 1/2 cups spaghetti sauce
1 1/2 cups pack baby spinach
1/2 cup shredded mozzarella cheese
Directions
Preheat oven to 400 degrees. Meanwhile, bring a large pot of salted water to a boil. Add noodles and cook until al dente, about 8-10 min. Drain well.
Grease a small casserole dish with cooking spray; set aside. Spread about 2 Tbsp. of cottage cheese, 2 Tbsp. spaghetti sauce on each noodle and top with spinach.
Starting at one end of roll up each noodle snugly, then arrange in pan either seam-side down or with rolls close enough together to hold each other closed.
Pour remaining spaghetti sauce over assembled rolls, then sprinkle with mozzarella and bake until golden and bubbly, about 20-25 min.
About 4-6 servings, 2 lasagna rolls each
