Number of Servings: 4


    1/2 cup sour cream
    1 1/2 teaspoons all-purpose flour
    2 medium leeks (white and pale green parts only), thinly sliced
    2 tablespoons unsalted butter
    2/3 cup water, divided
    4 (6-ounce) pieces thick white-fish fillets such as pollock or Pacific cod, skinned
    1 tablespoon chopped dill


Whisk together sour cream and flour.

Wash leeks, then put in a large heavy skillet with butter, 1/3 cup water, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cover with parchment, then with a lid, and simmer over medium heat, stirring once or twice, until leeks are tender, about 10 minutes.

Stir in sour-cream mixture and remaining 1/3 cup water.

Season fish with 1/4 teaspoon each of salt and pepper, then add to leeks and cook, covered with parchment and lid, until just cooked through, 8 to 10 minutes. Serve sprinkled with dill.

    Incredible recipe that I got off Epicurious some time ago and use at least once a month because 1.) it is SO QUICK and easy, and 2.) it's one of the few dinners my entire family devours, from toddler on up. I usually use frozen tilapia filets and sometimes spoon the sauce on broccoli. Mm. - 11/20/11

    OK...what can I say but, THIS WAS INCREDIBLE, my husband is a picky eater and not to found of new thing, but he loved this recipe. It was light and tastful, I made grilled asparagus to go with it. This is a must to try. - 2/4/13

    Made it for lunch today. Very tasty and quick as well. Hubby had one mouthful and declared this recipe a keeper. I did notice that the 2TBsp of butter were not listed in the calories by ingredients, so I added .5 TBsp butterto my daily calorie intake. - 3/2/12

  • This recipe is delicious! My son thinks I'm becoming a gourmet cook. I used Tilapia seasoned with Mrs. Dash garlic and herb seasoning. I also cut the ingredients in half for 2 pieces of fish. It's one of our new favorites. - 1/31/12

  • i really liked this recipe and would make it over and over. tastes so rich and creamy, but i used light sour cream and you really don't use that much anyway. delicious! - 5/11/10
