Spicy chilli quorn & mango stir fry

Introduction

Oooh this is so lush - quite sweet but with a kick!

Number of Servings: 2

Ingredients

    2 quorn fillets
    2 cloves garlic
    5g ginger
    1 tspn light soy sauce
    1.5 tbspn sweet Thai chilli sauce
    30g baby corn
    30g mange tout
    1/2 red pepper
    4 spring onions
    100g mango
    1 tspn olive oil
    1 tspn rice wine vinegar
    1/4 red chilli

Directions


Slice all veggies and quorn.

Fry quorn and veggies in oil. Add rice vinegar & soy sauce

Add a splash of water and chilli sauce

Stir until sauce is nice consistency

Serve with rice and a squeeze of lime juice
