Eating Well Black Bean Salad Topping for Baked Yams (1/4 cup serving)

Introduction

Hold the marshmallows! This topping is wonderful served over baked yams (sweet potatoes). Top with reduced fat sour cream, and snipped fresh cilantro. Mmmm... Hold the marshmallows! Number of Servings: 8

Ingredients

    1 15 oz. can black beans, rinsed
    2 medium tomatoes, diced
    1 T. extra-virgin olive oil
    1 tsp. ground cumin
    1 tsp. ground coriander
    3/4 tsp. salt

Directions

Combine all ingredients, and heat in saucepan until warm and flavors combined. As an alternative, can microwave in medium microwaveable bowl, 2-3 minutes.

To serve, slash open hot, baked yams (sweet potatoes). Press open to make a well in the center. Spoon the bean mixture into the well. Top with a dollop of reduced-fat sour cream, and a sprinkle of chopped fresh cilantro.

Makes about 2 cups. Serving = about 1/4 cup.
