Eating Well Black Bean Salad Topping for Baked Yams (1/4 cup serving)

Hold the marshmallows! This topping is wonderful served over baked yams (sweet potatoes). Top with reduced fat sour cream, and snipped fresh cilantro. Mmmm... Hold the marshmallows! Ingredients

1 15 oz. can black beans, rinsed
2 medium tomatoes, diced
1 T. extra-virgin olive oil
1 tsp. ground cumin
1 tsp. ground coriander
3/4 tsp. salt
Directions
Combine all ingredients, and heat in saucepan until warm and flavors combined. As an alternative, can microwave in medium microwaveable bowl, 2-3 minutes.
To serve, slash open hot, baked yams (sweet potatoes). Press open to make a well in the center. Spoon the bean mixture into the well. Top with a dollop of reduced-fat sour cream, and a sprinkle of chopped fresh cilantro.
Makes about 2 cups. Serving = about 1/4 cup.
