Carrot muffins (bran, walnuts)

Introduction

Ingredients

    1 3/4 cup whole wheat flour
    1 1/4 cup high fibre bran cereal
    1 tsp baking power
    1 tsp baking soda
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/2 tsp salt
    2 eggs
    1 cup grated carrots
    1/2 cup soured milk
    1/4 cup brown sugar
    2/3 cup applesauce
    1/2 cup walnut pieces

Directions

Pre-heat oven to 400 degrees F, 200 degrees C
Grease or paper-line one 12 cup muffin tin

1. In large bowl, combine flour, cereal, baking powder, baking soda, cinnamon, nutmeg and salt.

2. In separate bowl, beat eggs thoroughly; blend in carrots, milk, brown sugar and applesauce. Add to dry ingredients, stirring just until moistened. Stir in walnuts.

3. Spoon batter into muffin tin, filling each cup about 3/4 full. Bake in preheated oven for about 20 minutes or until tops of muffins spring back when lightly touched.
