1 lb lean ground beef
2 cups chopped onions
8 minced garlic cloves
1 tsp olive oil
1 100gr tin diced mild green chilies
2 tins Casa Fiesta refried beans
1 300gr bad of Tostitos Lime Tortilla Chips
3 oz grated cheddar
3 oz grated hot pepper jack cheese
4 cups frozen sweet corn
8 oz fresh salsa (plus more to serve)
cumin, oregano, chili powder and other seasonings as desired for mexican flavor
Crush tortilla chips in the bag to med size. Layer half in a baking pan sprayed with Pam. Add meat and bean mixture on top. Top with defrosted sweet corn. Top with remaining tortilla chips. Bake at 350 for about 45 minutes. Last 5 to 10 minutes add the grated cheese, and return to oven to melt.
Serve on a large bed of lettuce with diced tomatoes, low fat sour cream and lots of fresh salsa.
