1/2 cup uncooked quinoa
1 cup water
Large bunch flat leaf parsley
Large bunch cilantro
Large bunch mint
4 Tbsp extra virgin olive oil
4 Tbsp lemon juice
2. Process herbs in food processor
3. Cool quinoa, and toss with herbs.
4. Combine oil and lemon juice, toss with quinoa mixture.
