Apples & Raisins Bread Pudding

Ingredients

    4 slices Texas toast, cubed
    1 1/2 cups skim milk
    2 large eggs, lightly beaten
    1/2 cup Splenda, brown sugar blend
    1 cup raisins
    1 cup golden apples, cored, peeled & diced
    2 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1 tsp pure vanilla extract

    Fat Free Whipped Topping

Directions

Serves 6

Prepare an 8x8 square baking pan. Lightly coat with cooking spray.

In a large bowl, whisk eggs and sugar together until light and frothy. Add milk, vanilla extract and spices to whipped eggs. Place bread cubes, diced apples, and raisins in pan and pour custard over the bread. Mix gently to evenly distribute ingredients. Cover with foil and refrigerate for 30 minutes. Meanwhile, preheat oven to 325 degrees.

Bake covered in oven for 60 minutes or until puffed and golden. Remove and let cool on rack. Serve warm with a dollop of fat free whipped topping and a dash of cinammon on top.
