This salad does not require a salad dressing of any type, and is perfect for those who cannot have tomatoes. To add variety, either add tomatoes, sunflower seeds, or sprinkle with your favorite cheese. This salad is rich with Vitamin C and great for boosting up the immune system. Ingredients

    Red Bell Peppers.
    Green Apples.
    Cilantro
    Scallions
    Cucumber

Directions

It makes about 4-6 servings (depending on serving size). Use green apples to complement the sweetness of the red peppers. Cut apples, red bell peppers, cucumbers in small cubes, chop up scallions and cilantro. Mix all ingredients and serve.
