Introduction

Since my Angioplasty I've had to rustle up some tasty Breakfast items----this can't match the whole Egg(with Yolk) but then Beggars can't be choosers---so it has to make do!!! Number of Servings: 1

Ingredients

    2-3 large Egg Whites
    2 slices No Fat---low Sodium Bacon
    1tbsp.Shallots
    1tbsp.Fresh Coriander(Cilantro)finely chopped
    1 pinch Everest Brand Kitchen King Masala
    1 pinchTurmeric Powder
    1 pinch Red Chilli Powder
    dash of Black Pepper
    Salt to taste
    1 large slice Italian Bread
    0.5tbsp.Unsalted Butter

Directions

Finely chop all the Ingredients including the Bacon.Sprinkle with the Spices and mix well.Beat the Egg Whites till well mixed.Stir in the Seasonings and beat a little till well mixed.
METHOD
Melt half the Butter in the Frying Pan and spread till the base is fully coated with it.Pour in the Mixture and cover.Cook till fully set.
Serve with Buttered Toast.
