Chicken Noodle Soup

Introduction

Peanut flavor a'la Williamsburg's Peanut soup Peanut flavor a'la Williamsburg's Peanut soup
Number of Servings: 8

Ingredients

    Whole chicken (slice of two breast portions for another dinner)
    onion, chopped
    2 celery stalks
    1 T. garlic, minced
    3 carrots, chopped
    peanut butter, about 1/4 cup
    whole wheat noodles
    salt and pepper to taste

Directions

Cook chicken in pot of water with 1/2 of the onion, celery and salt/pepper to taste. Remove chicken. When cool enough to handle, pick of the meat and discard skin and bones and the celery. Put broth in refrigerator overnight. Next day, discard hardened fat from the broth. Add chopped carrots and onion, bring to a simmer. Add noodles and cook according to package directions. When time is up, add the meat back into the pot and stir in peanut butter slowly so it melts.

Makes 6-8 bowls of soup
