Beef lentil and onion soup

Ingredients

    Non-stick cooking spray
    1 lb. lean boneless beef stew meat cut into 1 in. pieces
    2 cups chopped carrots
    1 cup slice celery
    1 cup uncooked lentils
    2 tsp. dried thyme
    1/4 tsp. black pepper
    1/8 tsp. salt
    3 1/4 cups water
    1 can condensed French onion soup, undiluted

Directions

Spray large skillet with cooking spray. Heat skillet over medium-high heat until hot. Add beef; cook until browned on all sides.
Place carrots, celery, and lentils in crock pot. Top with beef. Sprinkle with thyme, pepper, and salt. Pour water and soup over mixture. Cover; cook on low 7 to 8 hours or high 3 1/2 to 4 hours or until meat and lentils are tender.
Makes 6 servings.
