Shrimp Scampi

Introduction

We use a bag of frozen shrimp to make it quick! We use a bag of frozen shrimp to make it quick!

Ingredients

    Shrimp, 70-75 small
    Unsalted Butter - 2 sticks
    Paprika - 2TBSP
    Garlic Powder - 2 tsp
    Garlic, Minced - 2 tsp
    Black Pepper - 1/2 tsp

Directions

Thaw and peel shrimp. Coat shrimp with paprika, garlic powder, and black pepper. Melt one stick of butter in nonstick pan. Add 1 tsp of minced garlic as butter melts. Add shrimp and cook until 90% done - stirring occasionally. Drain well into colander. (*this is key for final flavor!!) Do not scrape pan! Melt second stick of butter and add second teaspoon of minced garlic. Return shrimp to pan for an additional 3-5 minutes. Serve over rice or noodles.

A serving is about 10 small shrimp, so if you use other sizes, you will have to adjust accordingly. We serve over 1/2 cup of brown rice.
