Healing Chicken Vegetable Soup

Introduction

A homemade remedy for whatever ails you. Rich with vegetables and chicken. Serve alone or with biscuits. Or add spoonfulls of biscuit dough to the simmering soup for a nutrient-chocked version of Chicken n' Dumplins. A homemade remedy for whatever ails you. Rich with vegetables and chicken. Ingredients

    2 Skinless, Boneless Chicken Breast, diced
    1 Carrots, diced
    1 Celery Stalk, diced
    1 Medium Onion, diced
    1 Waxy-Type Potato, diced
    1/4 cup Green Peas
    1/2 cup Pumpkin or Hubbard Squash, diced
    1 1/3 litres Chicken Stock, homemade or boxed
    1 tsp Sage, ground
    1 1/2 tsp Thyme, ground
    2 tsp Salt
    1 tsp Black Pepper, freshly ground
    Water, as needed

Directions

Chop all veggies and chicken, add to large pot.
Pour in chicken stock and allow to simmer on low for 15-20 mins.
Add sage, thyme, salt & pepper and simmer until flavors are well blended.
Add water to thin, as needed.
Serve hot.

Makes enough for 5-6 main meals or 10-12 sides.
