Cheese Enchiladas

Introduction

My meatless version of the notoriously favored Chicken Enchilada's. My meatless version of the notoriously favored Chicken Enchilada's.
Number of Servings: 12

Ingredients

    1 cn. Enchilada Sauce or Enchilada Mx.

    12 Low Carb Flour or Regular Corn Tortillas (Flour Low Carb used)

    1/2 lb or 8 oz of Shredded Cheddar Cheese

    1 c. Chopped Onions, saute

    1 cn. Green Chiles, drained. *optional

Directions

Saute onions,drain & set aside in bowl with cheese. Toss together, try not to do while onions are still hot! Add greeen chiles, if using.
2 Tbsp of mx. added to each Tortilla, roll tightly closed & place into a 12 x 9 baking dish, pour sauce over entire ingredients, top with additional cheese & Bake at 350*, for 10-20 min.
Serve alone or with salad or Mex. Rice.

    They really are good! Limiting portion is the issue! They do freeze well if you can keep enough of them. LOL

    Thanks, got it off the Enchilada can and made it more Carb friendly. You should try the Chicken or Poultry Enchilada version too?

  • I didn't use the green chilis. I was afraid it might be too spicy for some, although I love them. I made this for a family dinner tonight and there was none left and requests for recipe. Simple to make and will definately make again. - 3/22/09
