Cheesy Ranch Breakfast Wraps

Introduction

Qick & easy when eggs & bacon are prepared ahead of time & kept in either Ziploc or air-tight container. Recipe originally from Atkins Cook Book, my version. Qick & easy when eggs & bacon are prepared ahead of time & kept in either Ziploc or air-tight container. Recipe originally from Atkins Cook Book, my version.

Ingredients

    2- Lrg. Eggs, whisked

    2- Tbs. Ranch dressing

    1/2 c. Colby & Monterey Jack Cheese,shredded

    2- cooked strips, Bacon

    2- Low Carb Totillas

Directions

Whisk eggs in bowl, add Ranch Dressing- whisk again. Pour into pre-heated non-stick pan, sprinkle cheese over the eggs & cook till firm & set aside.
Meanwhile, place Bacon in pan & cook till just done! Not crispy! Place tortillas on plate & Microwave for 10 sec. (till warm).
Remove tortillas from Microwave & place equal amounts of egg mixture & strips of bacon onto Tortillas, wrap like a Burrito & serve plain or with side of Picante Sauce (remembering Carbs difference).
