Mahtma 'saffron' Yellow&Lng.Grn. rice (1/3c.), 1 serving
Luck's Blackeyed Peas (1/2c), 1 serving
Onions, raw, 1 cup, chopped
Tyson Bonless Skinless Chicken Breasts, FRZN, 16 oz
Pepper, black, .25 tsp
Pepper, red or cayenne, .25 tsp
Garlic, 2 cloves
Thyme, ground, 1 tbsp
Chicken Broth or Bouillon, 1 cup (8 fl oz)
Poultry seasoning, .50 tbsp
Stir in broth,seasonings & bring mixture to boil. Stir in uncooked rice & reduce to simmer. Cover & cook about 10 min. till rice is almost tender.
Stir in peas & cover & cook till heated through & most of liquid is absorbed, about 10 min. Serve with additonal onion & fresh thyme if desired.
