Harvest Chicken Stew

Introduction

This is easy for cold days & can be done in a crock pot also. Adapted from Commercial Appeal newspaper. This is easy for cold days & can be done in a crock pot also. Adapted from Commercial Appeal newspaper.
Number of Servings: 4

Ingredients

    1 c. chopped onion
    1 c. cubed, cooked boneless chicken breast
    1/2 c chopped celery
    1 c. diced tomatoes w/liquid
    1 c. canned carrots, drained
    3 c. chicken broth or bouillione
    1/2 c. canned corn, drained
    1/2 c. canned peas, drained
    1/2 c. spinach frozen, thawed.

Directions

Cook chicken till just done & juices run clear. Set aside.
In a large soup pot combine the vegetables with the broth, stir well & bring to a boil. Lower heat & simmer over medium heat for 30 min.
Add chicken & simmer for another 30 min.

Alternative method for Crock Pots:
Follow the above method, adding chicken in the last 30-45 min. before serving.
