Hearty Minestrone

Ingredients

    * 1/2 package Jennie-O Italian Seasoned Ground Turkey
    * 1/2 pound 93% lean ground beef
    * 1 can Libby's Naturals Cut Green Beans
    * 1 can Libby's Naturals Whole Kernel Sweet Corn
    * 2 carrots, peeled and thinly sliced (approx. 1 cup)
    * 3 medium petite red potatoes, skin on, cubed
    * 1 jar Prego Traditional spaghetti sauce
    * 1.5 cups water
    * 1 tsp garlic powder
    * 1 tsp thyme
    * 1 tsp oregano

Directions

Stovetop Directions:
1. In a large pot coated with cooking spray, brown turkey sausage and ground beef with chopped onions. Pour into strainer and drain off fat. For further fat reduction, rinse with water (optional). Once drained, return meat to pot.

2. Sprinkle garlic powder, thyme, and oregano over meat.

3. Add green beans, corn, carrots, potatoes, Prego sauce and water. Simmer until vegetables are tender, about 30-45 minutes. Serve and enjoy!

Slow Cooker Directions:
1. Brown turkey sausage and ground beef in skillet. Pour into strainer and drain off fat. For further fat reduction, rinse with water (optional). Transfer into storage container and refrigerate.

2. Combine onion, green beans, corn, carrots, potatoes, Prego sauce, water, garlic powder, thyme, and oregano in slow cooker. Cook on LOW for 6-8 hours, or until vegetables are tender.

3. Add refrigerated sausage and beef mixture in the last 15-20 minutes of cooking time to warm it through. Serve and enjoy!
