Ingredients

    6 oz. boneless skinless chicken breast, diced
    2 t. canola oil
    1 head bok choy, chopped
    1 t garlic
    1 c mung bean sprouts
    1 t sesame oil
    2 t soy sauce
    1 c cooked white rice
    2 t sesame seeds

Directions

Start your rice. Heat a large skillet or wok with 2 t canola oil. Add chicken and cook until it's thoroughly done, about 3 minutes. Add the bok choy and stir. Cook for about a minute, then add the garlic and sprouts. Sautee another minute and add the sesame oil and soy sauce. Divide the rice into 2 bowls and top with the stir fry. Sprinkle a teaspoon of sesame seeds on each.
