3.5 cups white flour 0.5 cup wheat flour 1/4 teaspoon active dry yeast 1.5 teaspoons salt 2 cups warm water
Mix all ingredients until a dough forms. Cover with foil for 18 hours. punch down the dough with a spatula. Form into a ciabatta shaped loaf. Drizzle a baking sheet with a little bit of olive oil and then sprinkle some cornmeal on it, and transfer the loaf to the baking sheet. Sprinkle flour over the top of the loaf and cover with a floured towel. let rise 2 more hours. Bake in a 425˚F oven for 35 minutes.
