Introduction

Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 2 large, chopped
    Green Peppers (bell peppers), 1 chopped
    Garlic, 3 cloves, finely chopped
    Carrots, raw, 2 medium, pared & cut into 1/2 inch dice
    Zucchini, 2 cup, sliced
    Summer squash, 2 cup, sliced
    Chili powder, 2 tbsp
    Oregano, ground, .5 tsp
    Canned Tomatoes, in puree, 2 28 oz. cans
    Regular Beer, 1 can or bottle (12 fl oz)
    Salt, 1 tsp
    Beans, black, 15 oz can, rinsed & drained
    Beans, red kidney, 15 oz can, rinsed & drained
    Chickpeas (garbanzo beans), 15 oz can, rinsed & drained
    Bush's Blackeye Peas, 15 oz can, rinsed & drained

Directions

Makes 8 servings

Note: Nutritional info does not take into consideration that beans have been rinsed, so sodium count should be lower. Also, it is possible to leave out or reduce added salt.
