Introduction

This is an easy cold appetizer and a crowd pleaser. Its not an actual pizza, but more like a salad you can pick up and eat. Its full of fresh crunchy vegetables. Its a great summer treat because it goes right from the refrigerator to the table. No cooking required. This is an easy cold appetizer and a crowd pleaser. Number of Servings: 16

Ingredients

    4 whole wheat pitas
    2 8 ounce packages low fat cream cheese, softened
    ½ cup fat free ranch dressing
    1 cup chopped broccoli
    1 cup chopped tomatoes
    1 cup chopped green pepper
    1 cup chopped cauliflower
    1 cup shredded carrots
    2 cups shredded cheddar cheese

Directions

1. In a small mixing bowl, combine cream cheese and ranch dressing
2. Warm pita bread in microwave oven
3. Spread the cream cheese mixture onto the warm pita bread
4. Top with vegetables and cheddar cheese
5. Cut pitas into wedges and serve cold.
Its best if chilled for an hour or two before serving.
