Baked Pork w/ Vegi's & Potates

Introduction

Threw this together with ingredients on hand. Similar to a roast. Wanted to put in the oven and forget it.. Threw this together with ingredients on hand. Similar to a roast. Wanted to put in the oven and forget it..
Number of Servings: 4

Ingredients

    1.5 lbs pork country ribs
    4 small to medium potatoes (15 oz was used for this)
    1/2 green bell pepper
    1/2 red bell pepper
    2 whole peeled carrots
    1 serrano chile, could use jalapano
    juice from 1 lemon
    garlic salt and pepper to taste (I used it genereously)

Directions

Pre-heat oven to 375. or higher (my casserole dish has max temp of 375)
Cut potatoes in quarters, put in casserole dish. Cut all other vegetables into bite size pieces and put in dish. Sprinkle with garlic salt and pepper to taste. Could always add other seasons
Season pork with garlic salt and pepper on both sides. Place pork on top of vegetables. Squeeze lemon over pork.
Cover with foil and bake. Approx 90 mins.
