Carrot rice

Introduction

Pretty, nutritous and delicious orange carrot rice. Pretty, nutritous and delicious orange carrot rice.
Number of Servings: 2

Ingredients

    2 cups (about 3/4 cup dry) cooked white rice, pref med. Grain sticky type.
    1/2 cup onion ( about 1/2 a small) chopped fine
    1/2 cup grated carrot (about half a medium)
    1 pinch of thyme
    1/2 tsp of soy sauce(for deeper color)

Directions

Put rice on to cook or defrost your frozen rice.
Grate your carrot and chop your onion
heat a small frying pan and spray it with 2-4 seconds of non stick spray.
Sautee onion until translucent then add carrot. Continue to sautee until carrot becomes a bit juicy. Add thyme and remove from heat. Stir into cooked rice, drizzle soy for added color boost.
Make 2 servings.
