Ingredients

1.5 pounds potatoes (about 5 - 2.5 inch potatoes), cut but keep the skins
2 cups chopped cabbage
1/2 tsp. salt
1/3 cup scallions
2/3 cup skim milk
1 tbsp butter
1/8 tsp pepper
Directions
Steam potatoes in a basket for 5 minutes, add cabbage and steam for 10 more minutes. In a sauce pan heat milk, scallions, butter, salt and pepper, take off heat as soon as it boils. Pour potatoes and cabbage into a mixer bowl and mix on low for a minute. Add milk mixture and beat until you get your desired smoothness. You could also use a hand mixer or a potato masher. Serve warm. Makes four 1 cup servings.
