Chicken Enchiladas

Introduction

These are extremely easy and creamy chicken enchiladads!!!! YUMMY!
*Not so sure how accurate the nutritional information is because I only put about two tablespoons of the mixture in each tortilla.

Number of Servings: 1

Ingredients

    1 can of cream of chicken soup *98% fat free
    1 package of soft tortillas (I use the whole wheat)
    1 can of red enchilada sauce
    1 package of Kraft Mexican Style Shreaded Cheese
    3-4 chicken tenders (saute' in extra virgin olive oil)

Directions

Recipe makes approximately 8-10 chicken enchiladas

Saute' the chicken in extra virgin olive oil until browned. I normally shred the chicken after because I don't like chunks :)
Mix in a bowl- chicken, red sauce and cream of chicken soup.
Spread mixture on tortillas and top with cheese. Roll tortilla up and place in a lightly greased baking pan. Continue until you have used all of the tortillas (make sure to leave some extra sauce to spread on top of tortillas). Once all tortillas have been rolled and placed in the pan, spread remaining mixture on top of tortillas. Sprinkle with cheese and bake until cheese has melted. Approx 25-30 minutes.

Serve with light Kraft Ultimate 7 layer dip and chips or mexican rice.
