Coriander Yams

Introduction

I couldn't find this in the ingredient list, but you need to spray the foil-lined tray and then the top of the yams with a small amount of olive oil spray (Pam, etc.). Also, please note, I used 1 cup cubed yams because that was what they had, so be conscious of this when looking at the nutritional info.

You can make as many yams as you like, and I enjoy this both hot and cold.

Ingredients

    1 yam, sliced
    1 tsp salt
    1-2 Tbsp ground coriander
    1 tsp black pepper
    olive oil spray

Directions

1. Line jelly roll pan or cookie sheet with foil. Spray with olive oil spray (I use the first piece of yam to spread the spray oli around).

2. Peel and slice yam into uniform slices. Place on pan.

3. Spray tops of yam with olive oil spray. Sprinkle with grouond coriander, salt, and black pepper to taste.

4. Cook in oven on 400 degrees for 20-25 minutes. (I poke the biggest slices with a fork to be sure it goes through easily to ensure they are cooked through.) These can be eaten hot or placed in the refrigerator and eaten cold.
