Introduction

Easy banana bread recipe, without all the fat of traditional banana bread. The original weight watchers recipe also calls for walnuts, dates, and apricots which I do not use. Number of Servings: 12

Ingredients

    2 overripe bananas
    1.75 cups of all purpose flour
    3 tbls packed light brown sugar
    2.25 tsp baking powder
    .5 tsp salt
    .5 tsp cinnamon
    1 large egg
    .25 cup nonfat milk

Directions

Preheat oven to 350 degrees. Spray a loaf pan with nonstick spray. In a medium bowl combine flour, sugar, baking powder, salt and cinnamon. In a separate bowl beat the egg, milk and banana. Pour over the flour mixture and stir just until blended(don't overmix). Transfer to your loaf pan and bake for 45-60 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack- should make 12 slices.

  • I was very nervous at first! The mix was more like bread dough. I, like most people are used to the liquid version of Banana Bread. I love the cinnamon taste! The loaf is very light! I think I have found a new fav! Only 3 ww points plus! per serving - 3/2/13
