Sesame Kale salad with tofu

Introduction

This is a GREAT party dish - especially if you're partying with a bunch of vegetarians! Nice and colourful, filling, I think it's very festive! It makes a great lunch all by itself and keeps really well in the fridge in case you're taking it to work. With about 13 grams of protein, it's great training food!

the calculation is for 6 servings - but that's if you're eating it as a meal. If you're taking as a side it's more like 8-10 servings.

Number of Servings: 6

Ingredients

    * Sesame Oil, 1 T
    * Lime juice, about 1 t
    * Cabbage, red, fresh, 0.50 cup, shredded
    * Carrots, raw, 0.50 cup, grated
    * Red peppers, .5 cup, cut into thin strips
    * Garlic, 1 tsp
    * Ginger Root, 1 tsp grated
    * Kale, 6 cup, chopped
    * Hemp seeds, hulled 2 tbsp
    * Nakano Seasoned Rice Vinegar, 2 tbsp
    * Tofu, extra firm, 1 block
    * Soy sauce (shoyu), low sodium, 4 tbsp

Directions

Combine garlic, ginger, sesame seeds, rice vinegar, lime juice and soy sauce.
Pour 1/2 of the dressing over the tofu in a bag or bowl and marinade overnight.
Drain tofu and fry lightly till a little browned.
Let cool and cube.
Combine vegetables, tofu and reserved dressing. Let stand 20-30 minutes, serve cold or lightly warmed.
