Red Bean Soup

Introduction

Ingredients

    Olive Oil, 2 Tbsp
    Onions, raw, 2 small
    Garlic, 2 cloves
    Cumin, 2 tsp
    Pepper, red or cayenne, 1/4 tsp
    Paprika, 1 Tbsp
    Tomato Paste, 1 Tbsp
    Oregeno, .5 tsp
    Beans, red kidney, 800 grams (1 large can or 2-14 oz.)
    Water, tap, 4 cups
    *Del Monte Petite Cut Diced Tomatoes, 1 14 oz.

Directions

Heat oil in dutch oven. Add onion and garlic. Saute 4-5 minutes until tender. Add cumin, cayenne, and paprika and cook for 1 minute stirring constantly. Add rest of ingredients. Bring to a boil, drop heat and simmer for 10-15 minutes. Remove from burner and let cool soup slightly. Use an emersion blender to smooth out soup or use a food processor.

Serve with guacamole salsa.

2 Avacados chopped
1 Small Red onion chopped finely
1 Jalepeno chopped finely
Juice from 1 Lime
1 Tbsp fresh Cilantro
