1 pound chicken
6 oz whole wheat fettucine
3 cups fresh broccoli
1.3 tbsp peanut butter
1/4 cup soy sauce
1/4 cup sushi or rice vinegar
1/8 tsp crushed red peper flakes
Cook pasta according to package - except add broccoli during the last 4 minutes of cooking.
In small bowl, beat peanut butter, soy sauce, vinegar and red peppers with a whisk until smooth.
Drain pasta, add peanut butter mixture, toss to coat.
Optional: sprinkle with chopped unsalted dry roasted peanuts (not included in calorie count)
Makes 4 servings
