GF Banana Blueberry Cake

Ingredients

    * Banana, fresh, 1 medium (7" to 7-7/8" long)
    * Bob's Red Hill Whole Ground Flax Seed Meal, 1 tbsp
    * Vanilla extract, imitation, alcohol, 1 tsp
    * Cider Vinegar, 1 tbsp
    * Blue Agave Nectar, 1 tbsp
    * Brown Sugar, .33 cup, packed
    * Coconut Oil, .15 cup
    * Buckwheat, .33 cup
    * GF Sweet White Sorghum Flour, 0.33 cup
    * Tapioca Flour, Bob's Red Mill, 0.15 cup
    * Baking Powder, 1 tsp
    * Xantham Gum, .75 tsp
    * Cinnamon, ground, 1 tbsp
    * Salt, 1 dash
    * Blueberries, frozen (unsweetened), .35 cup, unthawed
    1/4 cup boiling water

Directions

beat boiling water, flax, vanilla, vinegar, banana, brown sugar, agave, and coconut oil well

Add in flours, baking powder, xantham gum, salt, and cinnamon, mix then continue beating until well mixed

Fold in blueberries, spread in 8x8 greased pan, and bake for 30 min at 375F until toothpick comes out clean and cake feels springy and slightly crisp on top.
