Introduction

Great Crockpot meal for a cookout, gathering or winter meal.

1/2 of the items listed for this recipe are NOT in the Spark People database so I had to use what was in there which made the recipe outrageous in most of the nutrition information. I used MUCH HEALTHIER selections!

Ingredients

1 8 0z can REDUCED SODIUM Tomato Sauce, (NOT LISTED IN THE SPARK DATABASE)
1 4-0Z can chopped Green Chili Peppers
    3 TBS Cider Vinegar,
    3 TBS Honey
1 TBS smoked or sweet Paprika
    1 TBS Tomato Paste
    1 TBS Worcestershire Sauce
3 tsp dry mustard (NOT FOUND IN THE SPARK DATABASE)
1 tsp ground chipotle powder (NOT FOUND IN THE SPARK DATABASE)
2 1/2 LBS boneless, skinless Chicken Breast
    1 small Onions chopped
    3 cloves Garlic

Directions

Using CROCKPOT
Stir tomato sauce, chilies, vinegar, honey, paprika, tomato paste, Worcestershire sauce, mustard, ground chipotle and salt if desired in bowl until smooth. Pour into crock pot cooking bag or crockpot bowl.
Add onion, garlic and chicken, stir to combine.

Put the lid on and cook on low until the chicken can be pulled apart, about 5 hours.

Transfer the chicken to a bowl or cutting board and shred using 2 forks. Return the shredded chicken to the pot and mix well. Adjust spices.

Serve on buns if desired or separately.

Use common sense as to portion size, I used a 1 1/2 cup serving for me.
Makes 6-8 1 cup servings.

  • This recipe was great! I did add a little bit of splenda brown sugar blend to give it a slightly sweeter taste, my whole family loved it! - 5/14/10
