Black Bean/Corn Dip (1/2 cup serving)

    1 can (15 oz) black beans, drained
    1 can (15 oz) corn, drained (can use frozen)
    1 can mild Ro Tel tomatoes, partially, or completely drained, to your liking (can use fresh pico instead)
    1/4 cup minced purple onion
    fresh cilantro, chopped, to taste
    Salt, to taste


Mix all ingredients. Serve w/ baked Tostitos. Makes 8 1/2 cup servings.
