healthier version of mashed potatoes w/ veggies snuck in! healthier version of mashed potatoes w/ veggies snuck in!
Number of Servings: 8

Ingredients

    1 lb potatoes (yukon gold is best)
    1 cup cauliflower
    1 parsnip
    1/2 cup chicken broth
    3 TBSP nonfat plain yogurt

Directions

makes eight 1/2 cup servings

boil all veg until fork tender, adding cauliflower towards end of cooking as it cooks much faster than other veg. mash w/ masher or electric mixer. blend in liquids. continue to blend until it is the consistency of "normal" mased potatoes.
