CE Shrimp on Orange Skewers

Ingredients

    Shrimp, 16 oz
    Oranges, 2 large (1 sliced, 1 zested and juiced)
    *Rice, Basamati, Brown - 1/2 Cup Dry
    Spinach, fresh, 3 1/2 cup
    Garlic, 2 cloves (minced)
    Olive Oil, 1/4 cup (divided)
    Swanson Chicken Broth 33% less sodium, 3 cup
    Salt, 1/2 tsp
    Pepper, black, 1/2 tsp

Directions

Cut one orange in quarters, leaving rind intact. Cut each quarter into 1/3rd inch slices for a total of 24 segments. Set aside in fridge.

Zest second orange and set zest aside. Cut orange in half, and squeeze for 1/2 cup of juice. In a large plastic bag, combine juice, garlic, 2 Tbsp Olive Oil and shrimp. Set aside in fridge for 1-3 hours (no longer as acid will destroy shrimp).

In a sauce pan over medium high heat, warm 2 Tbsp of olive oil, add rice and cook, stirring occasionally until lightly brown. About two minutes. Add broth. Increase heat to high and bring to boil. Cover, reduce to low heat, and cook until rice is tender (about 45 minjutes).

Stir into cooked rice, Spinach and orange zest. Cover and set aside.

Preaheat broiler to high. Coat a baking sheet with cooking spray. Drain shrimp, discarding marinade. Thread shrimp and orange slices on skewers and arrange on prepared sheet. Sprinkle with salt and pepper. Broil shrimp until cooked through (about 1 1/2 minutes per side).

Serve skewers with pilaf.
