CE Fra Diavolo Shrimp

Number of Servings: 4

Ingredients

    Shrimp, 16 oz
    Salt, 1/4 tsp
    Pepper, black, 1 dash
    *Peppers, red, fresh, 1 large, thinly sliced
    Onions, red 1, thinly sliced in halves
    Garlic, 2 cloves (minced)
    Del Monte Diced Tomatoes (no salt added) 2 cup
    Basil, 1 tsp
    Garlic powder, 1/2 tsp
    Pepper, red flakes 1/2 tsp

Directions

Heat 1 Tbsp of olive oil in a large skillet over medium heat. Add shrimp, seasoned with salt and pepper. Cook until opaque (less then 4 minutes). Transfer to a bowl and set aside.

Heat remaining oil in the same skillet. Add red bell pepper and cook, stirring frequently for five minutes. Add onion, and cook for 4 minutes. Add garlic and cook for one more minute. Stirring constantly.

Add tomatoes, basil, garlic powder and red pepper flakes. Add shrimp and simmer until heated through.

Suggested serving over rice, quinoa, pasta etc... (not calculated).
