Number of Servings: 10

Ingredients

    1 medium head Cabbage, fresh, (about 5-3/4" dia)
    1 cup, chopped Green Bell Peppers
    1 cup, chopped Onions
    1 tbsp Olive Oil
    1 3/4 cup diced Tomatoes
    1 cup sliced Mushrooms
    1 cup chopped Carrots
    6 cloves minced Garlic
    1 tbsp Herbes de Provence
    4 cubes Chicken Boullion Cubes
    1.5 cups Lentils
    4 cups water
    Salt and pepper to taste

Directions

Braise onions and cabbage with oil. Add garlic and remaining ingredients. Simmer until vegetables are soft. Add cooked lentils, tomatoes, seasonings and water. Makes 10 1-cup servings.
